The Science Behind Raw Honey

When honey is heated above 40°C, diastase (the enzyme that gives honey its characteristic flavour depth) begins to degrade. Above 60°C, most beneficial enzymes are destroyed. This is why commercially processed honey — which is routinely heated to 70°C and above for easy pouring and longer shelf life — is nutritionally a very different product from raw honey.

Honey Awareness: What to Look For

How to Test if Your Honey Is Real

  • Water test: Drop a teaspoon into a glass of water. Genuine honey sinks to the bottom. Adulterated honey dissolves quickly.
  • Thumb test: Put a small drop on your thumb. Real honey stays in place. Fake honey spreads or drips.
  • Crystallisation: Real honey crystallises over time. Honey that never crystallises has been heated or contains glucose syrup.
  • Burn test: Dip a matchstick in honey and strike it. Real honey catches fire. Adulterated honey often will not, due to water content.
  • Label check: Ingredients should say only ‘honey’. Any additional ingredient — including ‘glucose syrup’, ‘sugar’ or ‘corn syrup’ — is adulteration.

Golden Turmeric Honey Latte

Ingredients

  • 1 cup whole milk (or oat milk for vegan)
  • 1 heaped tsp Anavri Wild Forest Honey
  • 1/2 tsp turmeric powder
  • 1/4 tsp cinnamon powder
  • A pinch of black pepper (activates turmeric by 2000%)
  • 1/4 tsp fresh ginger, grated (optional)

Method

  1. Warm the milk gently over medium heat. Do not boil.
  2. Add turmeric, cinnamon, pepper, and ginger. Whisk until smooth and golden.
  3. Remove from heat and allow to cool to below 40°C.
  4. Stir in Anavri honey. Never add honey to boiling liquid — it destroys enzymes.
  5. Pour into a mug and serve immediately.

Method

Side dish or snack · 30 minutes · Serves 2

Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 2 tbsp Anavri Wild Forest Honey
  • 1 tbsp Anavri A2 Gir Cow Ghee (melted)
  • 1/2 tsp cinnamon
  • Salt and black pepper to taste
  • Fresh thyme or rosemary (optional)

Method

  1. Preheat oven to 200°C.
  2. Toss sweet potato cubes in melted ghee, salt, pepper, and cinnamon.
  3. Spread on a baking tray and roast for 20 minutes, turning once.
  4. Remove from oven, drizzle with Anavri honey while still hot.
  5. Return to oven for 5 more minutes until caramelised and golden.
  6. Garnish with fresh herbs and serve immediately.
